Description

This Grilled Pesto Chicken brings together the delicious taste of pesto with tender chicken for a quick and healthy dinner. Perfect for those who love easy, flavorful meals!


Ingredients

  • ½ cup pesto
  • 2 tbsp yogurt
  • 2 tbsp mayo
  • 2 tbsp lemon juice
  • 2 tbsp water
  • 2 garlic cloves, minced
  • ¼ tsp salt
  • 1 lb. chicken breast, thin sliced or slice larger breasts in half

Instructions

  1. In a large bowl, mix the pesto, yogurt, mayonnaise, lemon juice, water, minced garlic, and salt together.
  2. Add the chicken to the mixture and toss well to combine.
  3. Cover the bowl and refrigerate for at least 1 hour, or up to 24 hours to marinate.
  4. Twenty to thirty minutes before cooking, remove the chicken from the fridge to let it reach room temperature.
  5. Preheat the grill over medium heat (about 400°F), then place the chicken on the grill.
  6. Cook the chicken for 3 minutes on each side until fully cooked.
  7. Transfer the grilled chicken to a cutting board, let it rest for a few minutes, then slice and serve.
