This grilled chicken sandwich is packed with flavor, featuring juicy chicken, creamy garlic aioli, fresh avocado, crispy bacon, and ripe tomatoes. Perfect for summer BBQs or quick lunches, it’s a simple and delicious meal that everyone will love.

Ingredients

Scale
  • 4 boneless skinless chicken breasts (about 68 oz each)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • Black pepper to taste
  • Avocado oil or other high-heat oil
  • 1 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon dijon mustard or sriracha for spice
  • 1 tablespoon lemon juice
  • 4 brioche buns or ciabatta rolls
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • Lettuce leaves or arugula
  • 8 slices crispy bacon
  • ½ red onion, thinly sliced
  • Dill pickles
  • Hot honey for drizzling

Instructions

  1. Make the garlic aioli by mixing mayonnaise, minced garlic, dijon mustard, lemon juice, and seasonings in a small bowl, then cover and set aside.
  2. Prepare the chicken by drying it with paper towels, preheating the grill, and seasoning the chicken breasts with oil and spices.
  3. Grill the chicken for 4-7 minutes per side until cooked through; let rest before assembling.
  4. Slice and lightly toast brioche buns on the grill while the chicken rests.
  5. Spread garlic aioli on the bottom half of each toasted bun and add grilled chicken breast on top.
  6. Layer avocado slices, tomato slices, and lettuce on each sandwich; add crispy bacon and pickles if desired.
  7. Drizzle with hot honey to taste before topping with the other bun.
  8. Serve immediately while warm.

Notes

For a spicier kick, add sriracha to the garlic aioli.
Ensure the internal temperature of the chicken reaches 165°F for safety.
Feel free to customize toppings based on your preference.
