Description

These Graduation Cap & Diploma Sugar Cookies are simply delightful, featuring a buttery flavor and a fun design perfect for celebrating any graduation. With simple prep and key ingredients like white chocolate and almond extract, these cookies are a sweet treat made for special occasions.


Ingredients

  • 2 cups all purpose flour (plus more if needed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup butter (softened slightly)
  • 3/4 cups sugar
  • 1 large egg
  • 3/4 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • 16 ounces white chocolate
  • 1/3 cup light corn syrup (plus more if needed)
  • food coloring (flesh tone and other color for your grad caps)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the flour, salt, and baking powder. Set it aside.
  3. Cream together the softened butter and sugar until the mixture is light and fluffy.
  4. Incorporate the egg, vanilla, and almond extract into the butter mixture.
  5. Gradually add the dry ingredients and stir until just combined.
  6. If the dough feels sticky, add a small amount of flour.
  7. On a floured surface, roll out the cookie dough to about 1/8 inch thick.
  8. Cut twelve 3-inch circles from the rolled dough.
  9. Cut out twelve diamond shapes for the grad caps.
  10. Use the diamond cutter to make a triangular notch in each circle.
  11. Press the diamond-shaped dough into the notch on the circle, sealing the edges with your fingers.
  12. Bake the cookies in the preheated oven for 10-14 minutes, until the edges look set and the tops no longer appear wet.
  13. Let the cookies cool completely before decorating.

Notes

You can use different color modeling chocolate to personalize your grad caps.
For a firmer cookie, ensure to chill the dough before rolling it out.
Experiment with various food coloring to match your graduation theme.
