Description

  • 1 loaf brioche bread (14 ounces)
  • 6 large eggs
  • ¼ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • Pinch fine sea salt
  • 1 cups whole milk
  • 1 cup heavy cream
  • 2 teaspoons pure vanilla extract
  • ½ cup salted butter (softened)
  • ½ cup light brown sugar
  • ½ cup all-purpose flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon fine sea salt

Instructions

  1. Butter or grease two standard 12 cup muffin pans and set aside (or use liners).
  2. Cut bread into ½" cubes and place in a large bowl.
  3. In a medium bowl, whisk together eggs, brown sugar, granulated sugar, cinnamon, and a pinch of sea salt until smooth.
  4. Add cream, milk, and vanilla to the egg mixture and whisk until combined.
  5. Pour the egg mixture over the bread cubes and stir until the bread absorbs the liquid.
  6. Let the mixture sit for 5 minutes.
  7. Using a measuring cup, fill each well of the muffin tins with ¼ cup of the bread mixture (approximately 20 servings).
  8. Cover the muffin pans tightly with plastic wrap and refrigerate for several hours or overnight.

Notes

For added flavor, consider including chopped fruits or nuts in the bread mixture.
These muffins can be frozen for later; just reheat in the oven before serving.
Adjust the sugar content to your preference if you like your muffins less sweet.
