Description
This French Onion Meatloaf is packed with rich flavors from caramelized onions and topped with melted cheese. It’s an ideal choice for cozy dinners and easy family meals.

- 3 tablespoons butter
- 2 large onions
- 2 pounds ground beef
- 2 eggs
- 1/2 cup breadcrumbs
- 1 tablespoon worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon flour
- 1 cup beef broth
- 1/2 cup swiss cheese
- 4–5 slices provolone cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a large skillet over medium heat. Add the sliced onions and cook for 20-25 minutes until golden brown and caramelized. Set aside half of the onions for the sauce.
- In a large bowl, mix ground beef, eggs, breadcrumbs, worcestershire sauce, thyme, salt, pepper, and the remaining caramelized onions. Combine gently until just mixed.
- Shape the meat mixture into a loaf and place it in a baking dish. Bake for 45 minutes.
- While the meatloaf is baking, add the reserved onions to the skillet with the remaining tablespoon of butter. Once melted, stir in flour and cook for 1 minute. Gradually whisk in beef broth, simmering until the sauce thickens (about 5-7 minutes).
- After baking, top the meatloaf with shredded Swiss cheese and provolone slices. Broil for 3-5 minutes until cheese is melted and golden.
- Let the meatloaf rest for 5-10 minutes before slicing. Serve with onion sauce over the top.
Notes
You can use any ground meat as an alternative to beef.
For extra flavor, add a teaspoon of garlic powder to the meat mixture.
Serve with mashed potatoes or a fresh green salad.
