  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat the oven to 450 degrees Fahrenheit.
  • In a large skillet, melt 2 tablespoons of butter over medium heat.
  • Add the chopped onion and cook, stirring occasionally, for 3-4 minutes until translucent.
  • Transfer the onions to a mixing bowl and let them cool for 2-3 minutes.
  • Mix in the blue cheese, panko breadcrumbs, kosher salt, and black pepper.
  • Gently mash the mixture together with a fork until combined.
  • In the same skillet, add the remaining 2 tablespoons of unsalted butter over high heat.
  • Season the filet mignon steaks generously with kosher salt and black pepper.
  • Sear the steaks for 3 minutes on each side until browned.
  • Top the steaks with the blue cheese mixture and transfer to the oven for 4 minutes for rare, 5-6 for medium, or longer for well done.
  • Let the steaks rest for 10 minutes, covered with foil, before serving.

Notes

Adjust the blue cheese quantity based on your preference for flavor intensity.
For extra crunch, you can increase the amount of panko breadcrumbs.
Allow the meat to rest properly to retain its juices.
