Description

Celebrate achievements with this Elegant Graduation Cake with Fondant Cap Topper. This cake features delightful flavors and a stunning fondant design, making it an irresistible centerpiece for your graduation party.


Ingredients

Scale
  • 2 Yellow sheet cake
  • 2 Chocolate sheet cake
  • 1 Cotton candy cake
  • 10 cups American buttercream frosting (Tinted yellow with gel food coloring)
  • 4 cups Marshmallow fondant (2 cups of black and 2 cups of white)
  • 1 batch Rice krispie treats (Can also use store-bought )

Instructions

  1. Bake 2 yellow sheet cakes (9×13 dimensions), 2 chocolate sheet cakes (9×13 dimensions) and 1 cotton candy dome cake (5 inch diameter). Note that leftover cotton candy batter can be used for cupcakes.
  2. Allow the cakes to cool completely.
  3. Prepare the yellow buttercream frosting while the cakes are baking and cooling.
  4. Making the cap cake: Place the dome cake on a cake board, frost smoothly with buttercream, and chill for 20 minutes. Roll out black fondant and place it over the cake, smoothing it out and cutting excess off.
  5. Create the cap top by cutting a square of cardboard, coloring edges with a black marker, and icing it before covering with black fondant. Cut excess fondant from the sides.
  6. For finishing touches on the cap, cut a small circle of fondant, brush corn syrup on cardboard edges, fold a ribbon and stick it there, then set the circle piece on top before adhering it to the dome with melted chocolate or royal icing.
  7. To create the edible diploma, roll rice krispie treats into a log shape, cover with buttercream, then wrap in white fondant before trimming.
  8. Use cookie cutters to make 2 white fondant circles for the ends of the log, attaching them with buttercream and wrapping a red ribbon around the diploma.
  9. To assemble the cake, place 2 chocolate cakes side by side on a board, ice them, then stack the yellow cakes on top, icing the whole structure smoothly.
  10. Fill a piping bag with yellow icing and pipe roses along the edges and top of the cake.
  11. Determine where the diploma and cap will go on the cake and insert supports before placing the prepared decorations on top.
  12. To finish, cut out letters for 'Congratulations Class of 2024' and stick them on the board with icing.

Notes

Feel free to use store-bought Rice Krispie treats for convenience.
Make sure to chill the buttercream cake before applying fondant for a sleek finish.
Customize the colors of the fondant to match the graduation theme.
