- 350 g hulled strawberries
- ¼ cup granulated sugar
- 1 ½ tablespoons cornstarch

- 1 teaspoon water

- turbinado sugar, as needed
Instructions
- In a large bowl, whisk together flour, sugar, and salt.
- Add the cold butter and use a pastry blender to cut it into the flour mixture until it resembles coarse sand.
- Mix in the egg yolks and ice water with a spatula until a shaggy dough forms.
- Transfer the mixture to a work surface and gently knead until it just holds together.
- Divide the dough into two parts, flatten into disks, and wrap in plastic wrap. Chill for at least 30 minutes or keep in the fridge for up to 2 days.
- One dough can be used for this recipe while the other can be frozen for later.
Notes
