Description

This Easy Cowboy Caviar is packed with vibrant flavors from black beans, corn, and fresh veggies. It’s simple to prepare and serves as a great dip or topping, making it a perfect option for gatherings or a healthy snack.


Ingredients

  • 2 (15-ounce) cans black beans drained and rinsed
  • 1 (15-ounce) can black-eyed peas drained and rinsed
  • 1 large red bell pepper seeded and diced
  • 1 large yellow bell pepper seeded and diced
  • 2 fresh jalapeños seeded and diced
  • 1 ½ cups frozen corn kernels thawed and drained
  • ½ cup finely diced red onion
  • ½ cup finely chopped fresh cilantro
  • 1 cup fresh seeded and diced tomato optional
  • 2 fresh avocados diced and added just before serving optional
  • ¼ cup red wine vinegar
  • 2 heaping tablespoons honey
  • 1 fresh lime juiced
  • 1 tablespoon fine sea salt
  • 2 chipotles in adobo plus 2 teaspoons sauce from the can
  • 1 cup avocado or vegetable oil
  • 1 teaspoons dried oregano
  • 1 teaspoons black pepper

Instructions

  1. In a large bowl, mix the black beans, black-eyed peas, red and yellow bell peppers, corn, onion, cilantro, and optional tomatoes.
  2. In a blender, combine red wine vinegar, honey, lime juice, salt, chipotles, and sauce. Blend until mixed, then slowly add the oil while blending until the dressing thickens. Stir in oregano and black pepper, adjusting seasonings if needed.
  3. Pour half of the dressing over the bean and vegetable mixture, stirring to combine. Cover and refrigerate for at least 3 hours.
  4. Before serving, stir the cowboy caviar and add more dressing if preferred. If using, fold in fresh avocado just before serving. Store any leftover dressing in the refrigerator.
  5. Serve with tortilla chips or as a topping for tacos.

Notes

For an extra kick, adjust the amount of jalapeños according to your spice preference.
This dish can be made a day ahead for enhanced flavor as it sits in the refrigerator.
