Description
This Easy Chicken Parmesan features crispy pan-fried chicken breasts coated with seasoned bread crumbs and Parmigiano-Reggiano, making it a delicious option for a quick dinner or comforting meal.
Ingredients
Scale
- ½ cup all purpose flour
- 2 eggs
- ⅔ cup seasoned italian bread crumbs
- ⅓ cup freshly grated parmigiano-reggiano cheese
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon finely chopped fresh herbs, such as thyme, parsley, chives or rosemary
- 3–4 boneless skinless chicken breasts (about 1½ pounds), pounded ¼"-thick
- salt and freshly ground black pepper
- ¼ cup olive oil
- lemon wedges, for serving
Instructions
- Prepare three large shallow bowls: fill the first with flour, the second with beaten eggs, and the third with a mixture of bread crumbs, Parmesan cheese, salt, pepper, and fresh herbs.
- Season the chicken breasts with salt and pepper. Coat each breast in flour, then dip in the egg mixture, allowing excess to drip off, and finally coat in the bread crumb mixture. Place breaded chicken on a plate and repeat for remaining breasts.
- Heat olive oil in a large sauté pan over medium heat. Once hot, add the chicken breasts and cook for 2 to 3 minutes until golden brown. Flip and continue cooking for another 2 to 3 minutes until cooked through. Serve with lemon wedges.
Notes
For larger chicken breasts, consider cutting them in half for even cooking.
You can prep the chicken a day ahead by breading and refrigerating it until cooking time.
Freeze breaded chicken before cooking for easy meals later. Thaw overnight in the refrigerator before frying.
