Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. For the crust, combine flour, sugar, and salt in a food processor and pulse until mixed.
  2. Incorporate cold, diced butter until you achieve coarse crumbs.
  3. Add cold water and pulse until moist clumps form.
  4. Transfer dough onto parchment paper, divide into two balls, and flatten into discs. Avoid kneading.
  5. Wrap each disc in plastic wrap and refrigerate for 1 hour before use.
  6. Preheat the oven to 400 degrees once the crust is ready.
  7. Prepare the blackberry filling by mixing water, lemon juice, vanilla, and blackberries in a saucepan over medium heat.
  8. Stir in sugar and cornstarch gently, cooking until thickened. Set aside when done.
  9. Flour the counter lightly and roll out the bottom crust to a 12" circle. Transfer it to a 9" pie plate.
  10. Spread the blackberry mixture evenly into the pie crust, avoiding edges for easy sealing.
  11. Roll out the second crust and place it over the filling.
  12. Trim any excess crust and pinch the edges together.
  13. In a bowl, whisk together the egg and water to create an egg wash, brush over the pie.
  14. For extra sweetness, sprinkle sugar on top of the pie.
  15. Cut a few slits in the center for steam release.
  16. Bake for 15 minutes at 400 degrees, then reduce to 350 degrees and bake for 45-50 minutes until bubbly and golden.
  17. Check at 30 minutes; cover with foil if crust browns too quickly.
  18. Allow to cool at room temperature before slicing and serving.
