Ingredients
Scale
- 2 1/2 cups flour
- 1/2 tbsp sugar
- 1/2 tsp salt
- 1 cup butter, cold & diced
- 7 tbsp cold water
- 1 egg + 1 tbsp water for egg wash
- sugar for sprinkling, optional
- 2 tbsp water
- 2 tsp lemon juice
- 1 tsp vanilla
- 6 cups blackberries
- 3/4 cup sugar
- 5 tbsp cornstarch
Instructions
- For the crust, combine flour, sugar, and salt in a food processor and pulse until mixed.
- Incorporate cold, diced butter until you achieve coarse crumbs.
- Add cold water and pulse until moist clumps form.
- Transfer dough onto parchment paper, divide into two balls, and flatten into discs. Avoid kneading.
- Wrap each disc in plastic wrap and refrigerate for 1 hour before use.
- Preheat the oven to 400 degrees once the crust is ready.
- Prepare the blackberry filling by mixing water, lemon juice, vanilla, and blackberries in a saucepan over medium heat.
- Stir in sugar and cornstarch gently, cooking until thickened. Set aside when done.
- Flour the counter lightly and roll out the bottom crust to a 12" circle. Transfer it to a 9" pie plate.
- Spread the blackberry mixture evenly into the pie crust, avoiding edges for easy sealing.
- Roll out the second crust and place it over the filling.
- Trim any excess crust and pinch the edges together.
- In a bowl, whisk together the egg and water to create an egg wash, brush over the pie.
- For extra sweetness, sprinkle sugar on top of the pie.
- Cut a few slits in the center for steam release.
- Bake for 15 minutes at 400 degrees, then reduce to 350 degrees and bake for 45-50 minutes until bubbly and golden.
- Check at 30 minutes; cover with foil if crust browns too quickly.
- Allow to cool at room temperature before slicing and serving.
Notes
Ensure your butter is cold for a flaky crust.
Feel free to adjust the sweetness of the filling by varying the sugar amount.
Serve with whipped cream or ice cream for an extra treat.
