- 2 tablespoons olive oil
- 1 medium red onion chopped small
- 4 cloves garlic minced
- 2 jalapeño peppers seeded and chopped
- 2 (15-ounce) cans black beans drained and rinsed
- 1/2 teaspoon ground cumin
- 1 teaspoon salt or to taste
- 3 tablespoons fresh lime juice
- 1/4 cup chopped cilantro plus more for serving

Instructions
- Warm the olive oil in a small pan over medium heat.
- Add the chopped red onion, minced garlic, and chopped jalapeño peppers to the pan and sauté for 5-8 minutes, stirring frequently.
- Remove the pan from heat and set aside.
- In a food processor, combine the drained and rinsed black beans, sautéed onion mixture, ground cumin, salt, lime juice, and chopped cilantro.
- Process until the mixture is fairly smooth, leaving some texture if desired.
- Transfer the dip to a serving dish and garnish with additional chopped cilantro, vegan cheese, and pickled red onions if desired.
- Serve the dip with tortilla chips.
Notes
Feel free to adjust the level of spiciness by adding more or fewer jalapeños.
This dip can be made ahead of time and stored in the refrigerator for up to 3 days.
