Description

These Decadent Cottage Cheese Date Brownies combine the rich flavors of chocolate with a protein-packed base, featuring creamy cottage cheese and naturally sweet dates. Perfect for a healthy snack or delightful dessert, this recipe is simple and rewarding!


Ingredients

  • 10 dates (soaked in hot water for 10 minutes to soften)
  • 1/2 cup almond flour
  • 4 tbsp chocolate protein powder
  • 2 tbsp cocoa powder
  • 2 1/2 tbsp maple syrup
  • 1 tsp vanilla
  • 1/8 teaspoon salt
  • 1 cup cottage cheese (good culture brand provides the best thick texture)
  • 1/2 cup vanilla protein powder
  • 1 1/4 cups almond flour (i always use king arthur for a finer crumb)
  • 2 1/2 tbsp maple syrup
  • 2 tbsp cashew butter
  • 1 1/2 tsp vanilla
  • 1/3 cup mini chocolate chips (i prefer enjoy life for their clean ingredients)

Instructions

  • Soak the dates in hot water for 10 minutes, then drain them. Blend the dates with chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt until smooth to form the brownie base.
  • In a bowl, mix cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla until smooth. Gently fold in mini chocolate chips at the end.
  • Line an 8×8 inch baking dish with parchment paper. Spread the date-chocolate mixture evenly at the bottom, then layer the cottage cheese mixture on top, smoothing it out evenly.
  • Freeze for at least 1 hour until firm. Use the parchment paper to lift the block out and cut into squares. Serve from the freezer or at room temperature after a few minutes.

Notes

For easier mixing, ensure your cottage cheese is creamy and smooth.
You can substitute the protein powders with equivalent non-protein flour if desired.
Feel free to add nuts or other mix-ins to customize your brownies.
