  • 1 (10-ounce) can mild diced tomatoes with green chiles
  • 3 bell peppers (green, yellow, and red, sliced into strips)
  • 1 large yellow onion (sliced)
  • 4 cloves garlic (minced)
  • 1 ½ pounds boneless skinless chicken breasts
  • 1 (1.25-ounce) packet fajita seasoning mix
  • ½ teaspoon black pepper
  • 2 tablespoons fresh lime juice (1 lime)
  • Soft shell fajita tortillas (warmed, optional for serving)
  • Fresh chopped cilantro (optional for serving)
  • Sour cream (optional for serving)

Instructions

  1. Combine the diced tomatoes, sliced bell peppers, sliced onion, minced garlic, and chicken in a 6-quart or larger slow cooker.
  2. Sprinkle the fajita seasoning and black pepper on top of the chicken, then add the lime juice.
  3. Cover the slow cooker and cook on low for 6–8 hours or high for about 4 hours until the chicken is cooked and tender.
