Description

These Crispy Smashed Black Bean Tacos with Mango Salsa are a delightful combination of flavors. With fresh mango, seasoned black beans, and gooey Monterey Jack cheese, this recipe is simple yet satisfying, ideal for a quick dinner or a healthy meal option.


Ingredients

  • 1 ½ cups diced mango
  • 1 shallot, diced
  • 1 jalapeno pepper, seeded and diced
  • ⅓ cup chopped cilantro
  • 2 to 3 tablespoons fresh lime juice
  • kosher salt and pepper to taste
  • 1 (14 ounce) can black beans, drained and rinsed
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • 1 cup freshly grated Monterey Jack cheese
  • oil or butter for cooking
  • 8 to 12 small fajita-size flour tortillas

Instructions

  1. In a bowl, combine the mango, shallot, jalapeno, cilantro, lime juice, and a generous amount of salt and pepper. Toss thoroughly and refrigerate for a few hours if desired.
  2. In another bowl, mix the black beans with salt, pepper, smoked paprika, cumin, and garlic powder. Use a fork to roughly mash some of the beans while leaving others whole.
  3. Heat a nonstick skillet over medium heat. Add the black bean mixture and cook, stirring occasionally, until the edges start to crisp and everything is heated through. Sprinkle some Monterey Jack cheese on top and allow it to melt.
  4. Transfer the cooked beans to a plate.
  5. Using the same skillet, add a bit of olive oil or butter. On one side of each tortilla, add some cheese and a portion of the black bean mixture. Fold the tortilla over and cook until both sides are golden brown and crispy, allowing the cheese to melt completely.
  6. Serve the tacos hot with the mango salsa on the side.

Notes

Prepare the mango salsa a few hours in advance to enhance the flavors.
Adjust the heat by adding more or less jalapeno to your preference.
Feel free to use corn tortillas for a gluten-free option.
