  • 2 medium zucchini, sliced
  • 2 cups panko breadcrumbs
  • 1/2 tsp salt
  • 1 cup flour
  • 3 eggs, beaten

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Slice the zucchini into 1/4" rounds and set them aside.
  3. In a bowl, whisk together the panko breadcrumbs and salt.
  4. Put the flour in a shallow plate and beat the eggs in a shallow bowl.
  5. Dredge each zucchini round in the flour, dip it into the beaten eggs, then coat it with the breadcrumb mixture.
  6. Fry the zucchini rounds in the hot oil until golden brown on both sides, repeating the process until all slices are cooked.

Notes

Ensure the oil is hot enough before frying to achieve crispiness.
