Description

This Creamy Tortellini Soup combines delicious Italian sausage, fresh kale, and cheesy tortellini for a comforting meal. Perfect for a quick dinner or healthy family dish, this recipe offers irresistible flavors and simple preparation.


Ingredients

  • 1 pound ground italian sausage, mild or spicy
  • 1 medium white onion, diced
  • 1 large carrot, diced
  • 5 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1/2 teaspoon crushed red pepper flakes
  • 4 cups chicken stock
  • 1 (15-ounce) can white beans, rinsed and drained
  • 1 teaspoon italian seasoning
  • 1 (15-ounce) can fire-roasted diced tomatoes
  • 1 (9-ounce) package cheese tortellini
  • 3 cups chopped fresh kale
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese, plus extra for serving
  • 3 tablespoons minced fresh basil
  • fine sea salt and freshly-ground black pepper

Instructions

  1. Heat a large stockpot over medium-high heat and brown the Italian sausage, crumbling it with a spoon until fully cooked. Remove and set aside.
  2. In the same pot, add diced onion and carrot, sautéing for 5 minutes. Stir in minced garlic and cook for an additional 2 minutes.
  3. Mix in the tomato paste and crushed red pepper, sautéing for another 2 minutes before adding the chicken stock and white beans. Stir in Italian seasoning and bring to a simmer for 5 minutes, or until carrots are tender.
  4. Use an immersion blender to purée the soup until smooth.
  5. Return the cooked sausage to the pot, then stir in diced tomatoes, tortellini, kale, heavy cream, parmesan, and basil. Cook for 3-5 minutes until tortellini is tender.
  6. Adjust seasoning with salt and pepper to taste and serve immediately, garnished with extra parmesan.

Notes

Feel free to customize the vegetables according to your preference.
For a richer flavor, use homemade chicken stock.
This soup can be stored in the refrigerator for up to 3 days.
