Description

This Creamy Cucumber Pasta Salad combines rotini, crisp cucumbers, and a flavorful creamy dressing. It’s a delightful dish that’s quick to prepare and great for gatherings or a light meal.


Ingredients

  • 1/2 pound rotini pasta
  • 1 cucumber, thinly sliced
  • 1/2 sweet white onion, thinly sliced
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 tbsp dill
  • 2 tbsp white vinegar

Instructions

  1. Cook rotini pasta until al dente as per package instructions, then rinse it under cold water to cool.
  2. Slice the cucumber in half, remove the seeds with a spoon, and cut into thin slices; set aside.
  3. Thinly slice the onion and soak it in cold water for a few minutes.
  4. In a small bowl, whisk together the sour cream, mayonnaise, sugar, salt, dill, and white vinegar to create the dressing.
  5. In a large bowl, combine all ingredients, mix well, and refrigerate for 45 minutes before serving.

Notes

For additional flavor, consider adding cherry tomatoes or bell peppers.
This salad can be made a day ahead and stored in the refrigerator to enhance the flavors.
