- 1/2 pound rotini pasta
- 1 cucumber, thinly sliced
- 1/2 sweet white onion, thinly sliced
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tsp sugar
- 1/2 tsp salt
- 2 tbsp dill
- 2 tbsp white vinegar
Instructions
- Cook rotini pasta until al dente as per package instructions, then rinse it under cold water to cool.
- Slice the cucumber in half, remove the seeds with a spoon, and cut into thin slices; set aside.
- Thinly slice the onion and soak it in cold water for a few minutes.
- In a small bowl, whisk together the sour cream, mayonnaise, sugar, salt, dill, and white vinegar to create the dressing.
- In a large bowl, combine all ingredients, mix well, and refrigerate for 45 minutes before serving.
Notes
For additional flavor, consider adding cherry tomatoes or bell peppers.
