- salt and pepper, to taste
- 1 cup cilantro lime crema
- cilantro, for garnish
- Tajin, for garnish
- crumbled cotija cheese, or queso fresco, for garnish
Instructions
- Preheat the oven to 400°F.
- Arrange the corn on a large baking sheet and brush each ear with softened butter. Season with salt and pepper.
- Roast the corn in the oven for 20 minutes. For a charred finish, turn on the broiler for the last 2 minutes, watching closely to avoid burning. Rotate the corn to char all sides evenly.
- Take the corn out of the oven, generously spread cilantro lime crema over each ear, and finish with desired toppings. Enjoy!
