Description

Creamy Chicken Orzo Bake is a delightful and satisfying dish made with tender chicken, orzo, and flavorful mushrooms. This easy recipe is perfect for a quick dinner or a cozy night in with loved ones, bringing comfort food to your table with minimal preparation.


Ingredients

  • 1 cup chicken broth
  • 1/2 cup dry white wine (or additional chicken broth)
  • 1 (10.5 oz) can cream of chicken and herb soup
  • 1 1/2 cups orzo
  • 1 (8 oz) can mushrooms (well drained)
  • 1 (2 oz) packet Lipton onion soup mix (dry mix only)
  • 1 1/2 lbs boneless, skinless, thin chicken breasts (or chicken cutlets)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F and prepare a 9×13 casserole dish with nonstick spray.
  2. In a bowl, whisk together the chicken broth, wine, and soup until smooth. Stir in the orzo, mushrooms, and onion soup mix. Pour this mixture into the casserole dish.
  3. Season the chicken with garlic powder, onion powder, salt, and pepper, then place it over the orzo mixture. Cover the dish securely with foil.
  4. Bake for 55 to 60 minutes, removing the foil after the first 30 minutes. Ensure the chicken is cooked through and the orzo is tender, adding extra time if needed.
  5. Once cooked, remove from the oven, top with mozzarella and parmesan, and return to the oven for 3 to 5 minutes until the cheese melts.
  6. Let the casserole rest for 5 minutes after baking. Fluff the orzo with a fork before serving. Garnish with additional parmesan and fresh parsley if desired.

Notes

Feel free to swap the chicken for turkey or a vegetarian option for a different twist.
For added flavor, incorporate your favorite vegetables into the mix.
