Description

This Creamy Chicken Alfredo offers irresistible flavor with tender chicken, fettuccine, and a rich creamy sauce, making it an ideal choice for a quick dinner or comfort meal. Perfect for homemade family dinners!


Ingredients

Scale
  • 200 g chicken breast, cut in half horizontally
  • Salt and pepper
  • 1 tbsp olive oil
  • 250 g fettuccine
  • 2 cups milk, any fat %
  • 1 1/2 cups chicken stock
  • 1 large garlic clove, minced
  • 1/2 cup thickened cream
  • 3/4 cup freshly grated parmesan
  • Parsley, for garnish

Instructions

  1. Sprinkle both sides of the chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 2 minutes on each side until golden and cooked through. Remove the chicken to a plate, rest for 5 minutes, and then slice it while the pasta cooks.
  3. Add milk, chicken stock, and minced garlic to the skillet. Bring to a simmer, then add the fettuccine.
  4. Stir the pasta every 30 seconds for about 3 minutes until softened. Once soft, reduce heat to medium and stir occasionally.
  5. After about 9-10 minutes, pasta should be almost cooked with some liquid still in the skillet. Add the heavy cream and parmesan, mixing well.
  6. Simmer for about 2 minutes, stirring occasionally, until the sauce thickens and the pasta is fully cooked. If the sauce thickens too much, add a splash of hot water to restore silkiness.
  7. Adjust salt and pepper to taste and serve immediately, garnished with fresh parmesan and parsley.

Notes

Make sure not to overcook the pasta to retain its shape and texture.
For a lighter version, you can use reduced-fat cream and low-sodium chicken stock.
