- 1/2 cup butter
- 1 tsp garlic minced
- 1 cup heavy whipping cream
- 1 cup half and half
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups freshly grated parmesan cheese
- up to 1/4 cup hot milk (optional) or pasta water
- 1 pkg fettuccine noodles – cooked to package directions
- freshly chopped parsley for garnish
Instructions
- Melt the butter in a large skillet over medium high heat and add the minced garlic. Let it simmer for about a minute.
- Stir in the cream and half and half, whisking until combined. Bring to a gentle simmer.
- Add in the Italian seasoning, salt, and pepper, whisking to incorporate.
- Gradually stir in the Parmesan cheese, allowing it to melt slowly while stirring continuously.
- Once the cheese has melted completely and the sauce is smooth, whisk in hot milk or pasta water in small amounts to achieve desired thickness.
- Combine the sauce with the cooked fettuccine noodles and toss. Garnish with parsley if desired.
Notes
For a thicker sauce, use less milk or pasta water.
Freshly grated parmesan cheese gives the best flavor and texture.
You can add grilled chicken or shrimp for added protein.
