This Cowboy Chicken features mouthwatering chicken seasoned to perfection, with layers of black beans, corn, and melty cheese. It’s an effortless and delicious dish that’s perfect for a cozy dinner at home.

- 4 chicken cutlets or 2 chicken breasts cut horizontally
- 1½ teaspoons smoked paprika
- ¾ teaspoon garlic powder
- ¾ teaspoon onion powder
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil divided
- 1 small yellow onion diced
- 1 (15 ounce) can black beans drained and rinsed
- 1 (15.25 ounce) can corn kernels or southwest corn, drained
- 1 (10.5 ounce) can diced tomatoes with chilies or petite diced tomatoes, drained
- 2 tablespoons fresh lime juice (juice from 1 lime)
- ¼ cup barbecue sauce (any variety)
- ¾ cup shredded Mexican cheese blend
- chopped fresh cilantro, jalapeños, and avocado for serving
Instructions
- Preheat the oven to broil (500°F) and set the rack 6 inches below broiler.
- In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and pepper. Reserve 1½ teaspoons of this seasoning for the cowboy caviar.
- Season both sides of the chicken using the mixed seasonings.
- In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high. Cook chicken in batches for 3-4 minutes per side until fully cooked (165℉). Move to a plate.
- Reduce skillet heat to medium and add remaining olive oil. Cook diced onion until tender, about 4-5 minutes.
- Add beans, corn, diced tomatoes, reserved seasoning, and lime juice. Stir and heat for 4-5 minutes until warm.
- Return the chicken to the skillet, brush with BBQ sauce, and top with shredded cheese.
- Broil for 2-3 minutes until cheese is melted and bubbly.
- Serve topped with jalapeños, cilantro, and avocado, if desired.
Notes
For spiciness, add more jalapeños or a spicy BBQ sauce.
This dish can easily be made ahead of time and reheated for a quick dinner.
