Description

This Cottage Cheese Tiramisu Crepe Roll is a delicious blend of creamy cottage cheese and rich cocoa, offering irresistible flavor with simple preparation. Perfect for an easy dessert that impresses!


Ingredients

  • ½ cup all-purpose flour
  • ½ teaspoon kosher salt
  • 1 cup 4% cottage cheese
  • ½ cup water
  • 3 large eggs
  • 2 tablespoons unsalted butter
  • 1 tablespoon maple syrup
  • ½ cup heavy cream
  • ¾ cup 4% cottage cheese
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 2 tablespoons cocoa powder

Instructions

  1. Preheat the oven to 350℉. Line a standard baking sheet (12"x18") with parchment paper and spray with nonstick cooking spray.
  2. Blend the crepe ingredients in a high-speed blender until smooth.
  3. Pour the crepe mixture onto the prepared baking sheet.
  4. Bake at 350℉ for 10 minutes. Allow to cool for a few minutes before refrigerating for an hour.
  5. For the filling, blend together cottage cheese, syrup, vanilla extract, and espresso powder in a high-speed blender until smooth.
  6. In a separate bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the blended cottage cheese into the whipped cream.
  8. On a large cutting board, place the cooled crepe and spread the filling on top, leaving 3 inches empty at one end.
  9. Roll the crepe towards the empty end until fully rolled up.
  10. Sift cocoa powder on top, slice, and serve.

Notes

Make sure to refrigerate the crepes to help them set properly before rolling.
You can substitute maple syrup with honey if desired.
For added flavor, consider garnishing with chocolate shavings or extra cocoa powder.
