Instructions

  1. In a large mixing bowl, whisk the flour and baking powder together.
  2. In a separate bowl, mix the cottage cheese, eggs, milk, maple syrup, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined. A few lumps are fine; do not overmix.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  5. Scoop 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface and edges look set.
  6. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.

Notes

For a fluffier pancake, separate the egg whites and beat them until fluffy before folding them into the batter.
