Description

These Cottage Cheese Brownies are a delightful blend of fudgy goodness and healthy ingredients, perfect for a quick dessert. Made with cottage cheese, almond flour, and cacao powder, they offer irresistible flavor and a boost of protein. Enjoy a guilt-free treat that’s simple to make and delicious!

Ingredients

Scale
  • 2/3 cup cottage cheese blended
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1/3 cup cacao powder
  • 1/4 tsp baking soda
  • 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper or grease it well.
  2. Blend the cottage cheese in a blender or food processor until smooth, resembling thick yogurt. Set aside.
  3. In a large mixing bowl, whisk together the eggs, vanilla extract, coconut sugar, and maple syrup. Stir in the blended cottage cheese until well mixed.
  4. Incorporate almond flour, cacao powder, and baking soda into the mixture, stirring until a smooth brownie batter forms.
  5. Gently fold in chocolate chips, reserving a few for topping if desired.
  6. Transfer the batter into the prepared baking dish, spreading it evenly, then sprinkle the remaining chocolate chips on top.
  7. Bake for approximately 24–26 minutes, checking with a toothpick until it comes out mostly clean with some moist crumbs for a fudgy texture.
  8. Allow the brownies to cool in the pan for at least 15–20 minutes before slicing.

Notes

Make sure the cottage cheese is well blended for a smooth texture in the brownies.
These brownies can be stored in an airtight container for a few days, making them perfect for meal prep.
Feel free to swap chocolate chips for nuts or dried fruits for added texture.
