- 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)
Instructions
- Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper or grease it well.
- Blend the cottage cheese in a blender or food processor until smooth, resembling thick yogurt. Set aside.
- In a large mixing bowl, whisk together the eggs, vanilla extract, coconut sugar, and maple syrup. Stir in the blended cottage cheese until well mixed.
- Incorporate almond flour, cacao powder, and baking soda into the mixture, stirring until a smooth brownie batter forms.
- Gently fold in chocolate chips, reserving a few for topping if desired.
- Transfer the batter into the prepared baking dish, spreading it evenly, then sprinkle the remaining chocolate chips on top.
- Bake for approximately 24–26 minutes, checking with a toothpick until it comes out mostly clean with some moist crumbs for a fudgy texture.
- Allow the brownies to cool in the pan for at least 15–20 minutes before slicing.
