- 6 ounces bacon, cut into 1 inch pieces
- 1 pound pork sausage
- 2 large potatoes, peeled and cut into bite sized pieces
- 2 large onions, sliced
- 3 cups beef broth (or chicken broth)
- salt and pepper to taste
- 2 tablespoons parsley, chopped
Instructions
- In a large saucepan, cook the bacon pieces until crispy, then set them aside, leaving 2 tablespoons of grease in the pan.
- Brown the pork sausage on all sides in the same pan, then remove it and set aside.
- Add sliced onions to the saucepan and sauté them until they are tender.
- Layer the peeled and chopped potatoes over the onions, followed by the reserved bacon and browned sausage.
- Pour in the broth, bring the mixture to a boil, then reduce the heat and let it simmer for about 2 hours, covered.
- Season with salt and pepper to taste, stir in the chopped parsley, and serve.
Notes
Feel free to use chicken broth instead of beef for a lighter flavor.
You can add other vegetables like carrots for extra nutrition.
Letting the dish sit for a bit after cooking can enhance the flavors.
