- 4 cups water
- 2 cinnamon sticks
- 2 cups milk, dairy or dairy-free milk
- ⅓ cup maple syrup, or other sweetener
- 1 teaspoon vanilla extract
Instructions
- Combine the rice, water, and cinnamon sticks in a high-powered blender and blend for 40 to 60 seconds until ground.
- Transfer the mixture into a large container, cover, and chill in the fridge for 8 to 12 hours or overnight.
- Strain the mixture using a nut-milk bag into a pitcher.
- Add the milk, vanilla, and maple syrup. Adjust sweetness to taste.
- Serve the horchata over ice, garnished with freshly ground cinnamon or cinnamon sticks.
Notes
Chilling the mixture overnight enhances the flavor of the horchata.
