This Cinnamon Swirl Banana Cake is a delightful treat combining ripe bananas and warm spices. It’s easy to make and topped with a creamy glaze, perfect for gatherings or a cozy dessert at home.

- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3/4 teaspoon ground cinnamon

- 3/4 cup unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 3 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 1 1/2 cups mashed brown bananas, about 4 medium bananas
- 1 1/3 cups buttermilk, at room temperature
- 3/4 cup salted butter, softened
- 3/4 cup packed light brown sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon ground cinnamon
- 2 tablespoons butter, at room temperature
- 4 ounces cream cheese, at room temperature
- 2 cups confectioner’s sugar
- 1 teaspoon pure vanilla extract
- 2 to 3 tablespoons whole milk or heavy cream
Instructions
- Preheat the oven to 350 degrees F and prepare a 9×13-inch metal baking pan by greasing it or lining it with parchment paper.
- In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, and kosher salt. Set aside.
- In a stand mixer or using a hand mixer, beat together the unsalted butter, granulated sugar, and packed brown sugar until the mixture is creamy and smooth, approximately 3 minutes. Scrape down the bowl as needed.
- Add the eggs one at a time to the butter and sugar mixture, followed by the vanilla extract and mashed bananas. Mix until combined, scraping down the sides if necessary.
- With the mixer on low, gradually incorporate the dry ingredients in three parts, alternating with the buttermilk. Finish with the dry ingredients and do not over mix.
- Pour the batter into the prepared baking pan and set it aside as you prepare the cinnamon filling.
- In a medium bowl, combine the softened salted butter, light brown sugar, all-purpose flour, and ground cinnamon until smooth and creamy.
- Dollop the cinnamon filling evenly over the top of the cake batter and use the tip of a butter knife to swirl it into the top of the batter.
- Bake for about 30 to 35 minutes, checking with a toothpick inserted into the center until it comes out clean. Adjust baking time based on your oven.
- Remove the cake from the oven and allow it to cool on a wire rack for 10 to 15 minutes. It should be warm when adding the glaze.
- To prepare the glaze, beat together the softened butter and cream cheese until smooth, then add confectioner’s sugar, vanilla extract, and 2 tablespoons of milk, beating until smooth. Adjust consistency with more milk if needed.
- Spread the glaze over the warm cake, cut into squares, and serve.
Notes
Ensure that all ingredients are at room temperature for best results.
For a richer flavor, use ripe bananas with brown spots.
You can substitute the buttermilk with a mixture of milk and vinegar if needed.
