- 2 cups flour
- 1/2 cup cocoa powder
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 egg
- 5 tbsp butter, melted
- 1 tsp vanilla
- 1 cup milk
- 3/4 cup chocolate chips
- 1 cup zucchini, shredded
Instructions
- Preheat your oven to 375 degrees F. Line a 12-cup muffin pan with muffin liners and set aside.
- In a large bowl, whisk together the flour, cocoa powder, white and brown sugars, baking powder, and baking soda until well combined.
- Add the egg, melted butter, and vanilla to the dry ingredients and mix until thoroughly combined. Stir in the milk until smooth.
- Gently fold in the chocolate chips and shredded zucchini until evenly distributed in the batter.
- Scoop the batter into the muffin liners, filling each about 2/3 full. If desired, sprinkle some additional chocolate chips on top of each muffin.
- Bake in the preheated oven for 20 minutes, or until a toothpick inserted comes out clean.
Notes
For an extra kick of flavor, add a pinch of cinnamon to the dry ingredients.
Feel free to substitute half of the flour with whole wheat flour for a healthier option.
Store any leftover muffins in an airtight container at room temperature for up to 3 days.
