Description

This recipe features juicy chicken marinated in spices and yogurt, simmered in a creamy sauce with rich coconut milk. It’s perfect for a wholesome dinner that is both easy to prepare and incredibly satisfying.


Ingredients

  • 1 tablespoon garam masala
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 2 teaspoons ground turmeric
  • 2 teaspoons kosher salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 2 pounds boneless, skinless chicken breasts or thighs, cut into cubes
  • 1 cup plain, full-fat yogurt
  • 6 cloves garlic, grated, divided
  • 1 tablespoon freshly grated ginger, divided
  • 2 tablespoons oil
  • 1 tablespoon butter
  • 1 medium onion, finely diced
  • 1 can (15 ounces) canned tomato sauce or crushed tomatoes
  • 1 cup coconut milk or heavy cream
  • fresh cilantro, chopped, to serve
  • 4 cups basmati rice, to serve
  • homemade garlic naan, to serve

Instructions

  1. Whisk the spices together in a small bowl and set aside.
  2. Combine the chicken, yogurt, half of the garlic, half of the ginger, and half of the spice mixture in a large bowl. Cover and marinate for at least 15 minutes or overnight.
  3. Heat oil and butter in a large pot over medium-high heat. Remove chicken from marinade, add to the pot in batches, and cook until browned, about 6 minutes. Remove and set aside. Repeat with remaining chicken.
  4. Add the chopped onion, remaining garlic, ginger, and spices to the pot. Cook until the onion softens, about 4 minutes.
  5. Stir in crushed tomatoes and scrape the bottom of the pan to release the browned bits. Pour in coconut milk and return chicken to the pot.
  6. Reduce heat to low and let simmer for 10 minutes, stirring occasionally. Garnish with chopped cilantro and serve with basmati rice and naan.

Notes

Marinating the chicken overnight yields even more flavor.
Adjust the spiciness by changing the amount of cayenne pepper based on your preference.
Serve with a side of garlic naan and basmati rice for an authentic experience.
