  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 pound boneless skinless chicken breast
  • 1 pineapple
  • 3 bell peppers
  • 1 large red onion
  • fresh chopped cilantro
  • lime wedges

Instructions

  1. Whisk together the soy sauce, pineapple juice, lime juice, brown sugar, olive oil, sesame oil, chipotle chili powder, garlic powder, salt, and pepper in a medium bowl.
  2. Marinate the chicken in the mixture, cover, and refrigerate for at least 30 minutes, or overnight for enhanced flavor.
  3. Preheat your grill or oven to 400°F.
  4. Skewer the marinated chicken chunks, pineapple, bell peppers, and onions, and arrange them on a platter.
  5. Cook the kebabs by grilling for 15–20 minutes, turning every 5 minutes, or bake in the oven for the same time until chicken reaches 165°F.
  6. Serve the kebabs garnished with chopped cilantro and lime wedges if desired.
