Description

This Chicken Parmesan is a delectable dish featuring crispy chicken coated in seasoned breadcrumbs, topped with melty mozzarella and marinara sauce. Perfect for a quick yet comforting dinner!


Ingredients

  • 4 pieces boneless, skinless chicken breasts pounded to 1/2-inch thickness
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1.5 cups seasoned italian breadcrumbs use panko for extra crunch
  • 0.5 cup grated parmesan cheese use aged parmesan reggiano for best flavor
  • 1.5 cups vegetable oil for frying
  • 2 cups marinara sauce preferably homemade or high-quality jarred like rao’s
  • 1.5 cups shredded mozzarella cheese whole milk mozzarella melts best
  • 0.25 cup parmesan cheese grated, for topping
  • 2 tablespoons fresh basil chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Set up three shallow bowls: one for the flour, another for the beaten eggs, and the last for a mix of breadcrumbs and 1/2 cup of Parmesan cheese.
  3. Dredge each chicken breast in flour, shake off the excess, dip into the beaten eggs, then coat in the breadcrumb-Parmesan mixture, pressing gently to help it stick.
  4. Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken until golden brown, about 3–4 minutes per side, then drain on paper towels.
  5. Spread a thin layer of marinara sauce on the baking sheet. Place the fried chicken on top, spoon 2–3 tablespoons of marinara on each cutlet, and sprinkle with mozzarella and Parmesan.
  6. Bake for 20–25 minutes until the cheese is melted, bubbly, and slightly browned, ensuring the internal chicken temperature reaches 165°F (74°C).
  7. Remove from the oven and let rest for 5 minutes. Garnish with fresh basil before serving.

Notes

For an extra crispy texture, use panko breadcrumbs.
Fresh basil adds a wonderful aroma and flavor to the dish.
Marinara sauce can be homemade or store-bought, just ensure it’s high quality.
