Description

Chicken Marbella is a delicious and easy dish featuring tender chicken thighs marinated with olives, prunes, and spices. Perfect for a flavorful weeknight dinner, this recipe brings a taste of the Mediterranean to your table without complicated steps.


Ingredients

  • cloves of garlic
  • fresh basil
  • dried oregano
  • bay leaves
  • red wine vinegar
  • olive oil
  • brown sugar
  • green olives
  • pitted prunes
  • capers
  • salt
  • chicken thighs
  • white wine
  • chopped parsley

Instructions

  1. Peel and chop the cloves of garlic, using a mini food processor if desired.
  2. In a large glass or ceramic bowl, mix garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
  3. Add green olives, pitted prunes, capers, a pinch of salt, and chicken thighs to the mixture.
  4. Thoroughly combine to coat the chicken, then cover and refrigerate overnight or for at least 3 hours.
  5. Preheat the oven to 180C/350F.
  6. Arrange the chicken along with the marinade in a large baking pan, or divide into smaller pans to avoid overcrowding.
  7. Pour white wine around the chicken, careful not to soak it to maintain a crisp skin.
  8. Roast for 50 minutes to 1 hour until chicken is thoroughly cooked and golden brown, reaching an internal temperature of 74C/165F.
  9. Sprinkle with chopped parsley before serving.

Notes

For best results, marinate the chicken overnight to enhance flavor.
Ensure the chicken is evenly spaced in the pan to promote even roasting.
Serve with a side of roasted vegetables or crusty bread to soak up the flavorful sauce.
