Description

Ingredients

  • 1/2 medium red onion, thinly sliced
  • Zest and juice of 1 lemon
  • 1 tbsp white wine vinegar
  • 1 tsp maple syrup
  • 1 tsp extra virgin olive oil
  • 1/2 tsp sumac
  • Kosher salt, to taste
  • 2 tbsp olive oil
  • 4 garlic cloves
  • 1 whole lemon
  • 1 tsp dijon mustard
  • 1 tbsp white wine vinegar
  • 1 tbsp maple syrup
  • 1/4 cup parsley leaves
  • 1 tbsp tarragon leaves
  • 2 (15 oz) cans chickpeas, drained and rinsed
  • 1/3 cup pickled jalapeños, chopped
  • 1/4 cup marinated artichoke hearts, chopped
  • 2 scallions, thinly sliced
  • 2 tbsp mayo or plain unsweetened plant-based yogurt
  • Slices of sourdough or whole wheat bread
  • Dijon mustard or mayo, to spread on the bread
  • Lettuce

Instructions

  1. In a medium bowl, combine red onion, lemon zest, lemon juice, vinegar, maple syrup, olive oil, sumac, and a pinch of salt. Massage until onions soften, cover, and refrigerate.
  2. Heat 2 tbsp olive oil in a small pan over medium-low heat. Add garlic and sauté until golden, about 2-3 minutes. Remove from heat and cool.
  3. Return the pan to the heat, cut the lemon in half, and cook cut side down for 5-6 minutes until lightly charred. Cool before juicing.
  4. Combine charred lemon juice with garlic oil in a blender. Add mustard, vinegar, maple syrup, and salt. Blend until smooth, then pulse in parsley and tarragon.
  5. In a bowl, mash chickpeas with a fork or potato masher. Add jalapeños, artichokes, scallions, and mayo; mix well.
  6. Pour lemon dressing over the chickpea mixture and combine thoroughly. Adjust seasoning as needed.
  7. To assemble the sandwich, spread mustard or mayo on bread slices. Layer lettuce and chickpea salad, then top with the other bread slice.

Notes

Adjust the seasoning to taste before serving.
Use gluten-free bread for a gluten-free option.
