Ingredients

Scale
  • 1 3/4 cups flour
  • 1/2 cup brown sugar
  • 3/4 cup butter, softened
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 3 cups apples (peeled & diced)
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup flour
  • 1/2 cup quick oats
  • 2/3 cup brown sugar
  • 1 1/2 tsp cinnamon
  • 1/2 cup butter, melted
  • caramel sauce

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and spray a 9 x 13-inch pan with non-stick spray.
  2. In a small bowl, combine 1 3/4 cups flour, 1/2 cup brown sugar, and 3/4 cup softened butter to create a crumbly shortbread crust.
  3. Press the mixture into the prepared pan and bake for 20 minutes.
  4. In a medium bowl, beat together 2 softened packages of cream cheese, 1/2 cup sugar, and 1 tsp vanilla until smooth. Then, add in 2 eggs and mix well.
  5. Peel, core, and dice enough apples to fill 3 cups. In a mixing bowl, combine the apples with 2 tbsp brown sugar, 1/2 tsp cinnamon, and 1/4 tsp nutmeg.
  6. For the streusel layer, mix 1 cup flour, 1/2 cup quick oats, 2/3 cup brown sugar, 1 1/2 tsp cinnamon, and 1/2 cup melted butter until thick, using your hands to clump together.
  7. Once the crust is done, allow it to cool for 10 minutes before spreading the cheesecake layer evenly over it.
  8. Layer the apple mixture over the cheesecake, and then sprinkle the streusel over the apples.
  9. Bake for an additional 30-40 minutes, or until the cheesecake layer is set.
  10. Let the bars cool and refrigerate. Serve chilled with a drizzle of caramel sauce.

Notes

Ensure the cream cheese is softened for a smooth filling.
For added flavor, use a mix of tart and sweet apples.
Store leftovers in an airtight container in the refrigerator.
