- 3 peaches sliced
- 3 ears of corn husks removed, grilled and kernels cut off
- 2 balls burrata torn into chunks
- 3 tablespoons pepitas toasted
- basil leaves
- 2 tablespoons balsamic vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon maple syrup or honey
- 1 tablespoon olive oil
- Kosher salt and freshly ground black pepper to taste
Instructions
- Preheat the grill to 400°F. Rub olive oil and salt on the corn and grill for 8-10 minutes, rotating until cooked. Let cool and then cut off the kernels.
- Combine balsamic vinegar, dijon mustard, maple syrup or honey, and olive oil in a jar or bowl. Shake or whisk until mixed and season to taste.
- On a serving platter, arrange sliced peaches and scatter grilled corn over them.
- Tear burrata into chunks and place on top of the peaches and corn. Add pepitas and basil leaves, then drizzle with balsamic vinaigrette and serve.
Notes
For the best flavor, use ripe peaches.
You can substitute honey for maple syrup if preferred.
Feel free to add other seasonal ingredients like arugula or cherry tomatoes.
