Description

This Burger Bowl with Chipotle Ranch Sweet Potato Fries features a blend of bold flavors – succulent ground beef and crisp sweet potato fries drizzled with a creamy, spicy ranch. Perfect for a quick and hearty meal!


Ingredients

  • ½ cup sour cream (or plain Greek yogurt)
  • ⅓ cup mayonnaise
  • ¼ cup buttermilk
  • 2 chipotle peppers in adobo sauce
  • 1 teaspoon garlic paste
  • 2 teaspoons Sazon seasoning
  • 2 teaspoons dried parsley
  • Kosher salt & fresh ground black pepper- to taste
  • 3 medium sweet potatoes, cleaned (pat dry) & sliced into wedges
  • 3 tablespoons olive oil, divided
  • 2 ½ tablespoons Creole Cajun Seasoning– homemade or store-bought, divided
  • 1 lb ground beef
  • ½ medium yellow onion, diced
  • ⅓ cup beef broth (or water as sub)
  • Chopped romaine lettuce, halved cherry tomatoes, thinly sliced red onion, hamburger dill chips, and sliced avocado- as desired

Instructions

  1. Combine sour cream, mayonnaise, buttermilk, chipotle peppers, garlic paste, Sazon seasoning, dried parsley, and salt/pepper in a blender. Blend until smooth and refrigerate.
  2. Preheat the oven to 425°F and prepare a baking sheet.
  3. In a bowl, mix sweet potato wedges, 2 tablespoons olive oil, and Cajun seasoning. Toss to coat and place on the baking sheet.
  4. Bake sweet potato wedges at 425°F for 40 minutes until tender and crisp.
  5. Heat 1 tablespoon olive oil in a skillet, add ground beef, and break it apart until browned. Add diced onion and cook until translucent, about 3-4 minutes. Add remaining Cajun seasoning and beef broth, letting it simmer until thickened.
  6. Assemble bowls with romaine lettuce, baked sweet potato wedges, beef mixture, and desired toppings. Drizzle with chipotle ranch and serve.

Notes

Feel free to adjust the seasoning to your taste for a spicier or milder chipotle ranch.
If you prefer, sweet potatoes can be cut into different shapes like fries or rounds for varied textures.
This recipe is versatile; you can swap in different proteins such as ground turkey or chicken.
