Description

These Blueberry Pie Bars are a delightful treat with a buttery oat crust and sweet, juicy blueberries. Perfect for dessert lovers seeking a quick homemade delight!


Ingredients

  • 1 ¼ cup all purpose flour
  • 1 cup rolled oats
  • ½ cup brown sugar
  • ½ tsp baking powder
  • ½ tsp salt
  • 10 tbsp butter, melted
  • 1 tsp vanilla
  • 3 cups blueberries
  • 2 tbsp lemon juice
  • ⅓ cup sugar
  • 3 tbsp cornstarch
  • ½ tsp vanilla

Instructions

  1. Preheat the oven to 350°F and line an 8×8 baking dish with parchment paper, allowing a 1” overhang for easy removal.
  2. In a large bowl, combine flour, oats, brown sugar, baking powder, and salt. Add the melted butter and vanilla, stirring until well mixed.
  3. Press ⅔ of the crust mixture into the bottom of the prepared baking pan and set aside.
  4. In another bowl, mix blueberries, lemon juice, sugar, cornstarch, and vanilla. Pour this mixture over the crust in the baking dish. Sprinkle the remaining ⅓ of the crust mixture on top of the blueberries.
  5. Bake in the oven for 55 minutes or until the blueberries are bubbling and the crust is golden brown. Let the bars cool completely in the pan before lifting them out using the parchment paper. Cut into 9 bars and enjoy!

Notes

For a fun twist, add a hint of cinnamon to the crust mixture for extra flavor.
Store leftover bars in an airtight container for up to 3 days at room temperature.
Feel free to substitute other berries if desired, such as raspberries or blackberries.
