- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup whole milk
- 2 eggs
- 8 tablespoons unsalted butter (melted)

- 1 cup blueberries
Instructions
- Preheat the oven to 400°F and line a mini muffin pan with mini paper liners.
- In a medium bowl, combine flour, sugar, baking powder, and salt. Mix thoroughly.
- In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to over-mix.
- Fold in the blueberries gently.
- Fill each muffin liner about 2/3 full with batter.
- Bake for 10-12 minutes or until lightly browned and a toothpick inserted in the center comes out clean.
- Let cool before serving, and enjoy as they are or drizzled with a vanilla glaze.
Notes
For a richer flavor, consider slightly browning the butter before adding it to the mixture.
