Description

These Blueberry Muffin Bites burst with flavor and are a breeze to prepare. With fresh blueberries and a fluffy texture, they make for the ideal snack or sweet treat!


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk
  • 2 eggs
  • 8 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 400°F and line a mini muffin pan with mini paper liners.
  2. In a medium bowl, combine flour, sugar, baking powder, and salt. Mix thoroughly.
  3. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to over-mix.
  5. Fold in the blueberries gently.
  6. Fill each muffin liner about 2/3 full with batter.
  7. Bake for 10-12 minutes or until lightly browned and a toothpick inserted in the center comes out clean.
  8. Let cool before serving, and enjoy as they are or drizzled with a vanilla glaze.

Notes

For a richer flavor, consider slightly browning the butter before adding it to the mixture.
These bites can be stored in an airtight container at room temperature for a few days.
