- 2 cups all purpose flour
- 1 cup unsalted butter, room temperature
- 1/2 teaspoon salt
- 1/2 cup powdered sugar
- 4 eggs
- 2 cups granulated sugar
- 1/4 cup all purpose flour
- 1/4 cup lemon juice
- 2 teaspoons lemon zest, optional
- 1 cup fresh blueberries
Instructions
- In a medium bowl, combine the flour, salt, and powdered sugar. Cut in the butter with a fork or pastry blender until the butter is incorporated and the mixture is crumbly.
- Grease a 9×13 inch baking pan with cooking spray or butter. Press the crust mixture firmly into the prepared pan.
- Bake at 350°F for 18-20 minutes or until light golden brown. Remove from the oven and set aside to cool.
- In a separate bowl, whisk the eggs well. Add the sugar and flour and continue whisking. Stir in the lemon juice and zest, if using, and mix until thoroughly incorporated. Pour over the crust, then sprinkle the blueberries evenly over the lemon mixture.
- Bake for an additional 20-25 minutes or until the top is just beginning to turn golden brown. Remove from the oven and place on a wire rack to cool slightly.
- Once slightly cooled, transfer to the refrigerator for at least 2 hours to cool completely. Sprinkle with powdered sugar and cut into bars.
Notes
The lemon zest is optional but recommended for added flavor.
