Description

Treat yourself to a slice of Blueberry Crumble Pie, a delightful blend of fresh blueberries and a crunchy topping. This simple yet satisfying pie is perfect for gatherings or a cozy dinner at home.

Ingredients

Scale
  • 1 unbaked Flaky Pie Crust or All-Butter Pie Crust
  • 1 large egg beaten with 1 Tablespoon milk
  • 1/2 cup (100g) packed light or dark brown sugar
  • 6 Tablespoons (46g) all-purpose flour (spooned & leveled)
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 5 Tablespoons (71g) unsalted butter, very cold and cubed
  • 1/2 cup (43g) old-fashioned whole rolled oats
  • 6 cups (about 840g) fresh blueberries
  • 1/2 cup (100g) granulated sugar
  • 1/3 cup (41g) all-purpose flour
  • 1 Tablespoon cornstarch
  • 1 Tablespoon fresh lemon juice
  • 1 teaspoon fresh lemon zest

Instructions

  1. Prepare the flaky pie crust using your preferred method up through step 5.
  2. In a medium bowl, combine brown sugar, flour, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs, then mix in the oats. Chill until ready to use.
  3. Preheat the oven to 400°F (204°C).
  4. Roll out the chilled pie dough on a floured surface into a 12-inch round. Place into a 9-inch pie dish, crimp the edges, and brush with egg wash. Chill for at least 10 minutes.
  5. In a large bowl, combine blueberries, granulated sugar, flour, cornstarch, lemon juice, and zest. Mix until well combined, gently bursting some blueberries to moisten.
  6. Spoon the blueberry filling into the pie crust and top with the crumble mixture.
  7. Bake for 25 minutes, then reduce the oven temperature to 375°F (190°C). Protect the edges of the pie with a crust shield and continue baking for another 35-40 minutes or until the filling is bubbling and the internal temperature reaches 200°F (93°C).
  8. Cool the pie on a rack for at least 4-5 hours before slicing.
  9. Store leftover pie at room temperature for 1 day or refrigerate for up to 5 days.

Notes

For a crispy topping, ensure the butter is very cold before mixing.
Letting the pie cool completely helps set the filling for cleaner slices.
Serve with vanilla ice cream for an added treat.
