- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- ¾ cup 4% cottage cheese
- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste
- 1 graham cracker, crushed
Instructions
- Combine the blueberries, 1 tablespoon of maple syrup, and lemon juice in a small saucepan. Bring to a boil, then lower the heat and simmer for 10 minutes until the blueberries reduce by half.
- Remove the saucepan from heat and let the mixture cool for 10 minutes.
- In a blender, mix the cottage cheese, 3 tablespoons of maple syrup, cornstarch, and vanilla bean paste until smooth.
- Layer the blended cottage cheese and blueberry sauce in popsicle molds.
- Sprinkle crushed graham cracker on top of the layers in the molds.
- Freeze the popsicles overnight or for at least 5 hours.
Notes
Ensure you let the blueberry mixture cool before adding it to the popsicle molds to prevent melting the cottage cheese layer.
Use fresh blueberries for the best flavor, but frozen can be substituted if necessary.
For added sweetness, adjust the amount of maple syrup to your preference.
