Description

This Blackberry Vinaigrette offers an irresistible flavor to your salads with simple ingredients like fresh blackberries, honey, and olive oil. Perfect for a quick meal or healthy salad dressing!

Ingredients

Scale
  • 1 cup (140 g) blackberries, fresh or frozen
  • ½ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • 1 tablespoon honey, or more to taste
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely minced shallot
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dijon mustard

Instructions

  1. Place the blackberries, olive oil, apple cider vinegar, honey, lemon juice, shallot, salt, pepper, and Dijon mustard into a blender or immersion blender jar.
  2. Blend until the mixture is completely smooth and emulsified.
  3. Taste the vinaigrette and adjust seasoning as necessary, adding more honey for sweetness or vinegar for brightness.
  4. Serve the vinaigrette immediately or refrigerate until ready to use. If it separates, shake well before serving.

Notes

This vinaigrette pairs well with mixed greens and fruit salads.
Store any leftovers in an airtight container in the refrigerator for up to a week.
Feel free to add herbs like rosemary or thyme for a fresh twist.
