This Black Bean and Corn Salsa features a burst of flavors with sweet corn, black beans, and zesty peppers. Ideal for a healthy snack or vibrant party dip, it’s quick to prepare and absolutely delicious!

- 2 cups frozen corn, thawed
- 1 cup black beans, drained and rinsed
- 1/4 cup cilantro, finely chopped
- 1/4 cup red onion, finely chopped
- 2 tbsp fresh jalapeño, finely diced (optional)
- 1/4 cup red bell pepper, finely diced
- 2 tsp lime juice
- 2 tsp lemon juice
- 1/2 tsp salt
Instructions
- Thaw the frozen corn if not already thawed, then drain and rinse the black beans.
- In a large mixing bowl, combine the thawed corn, black beans, chopped cilantro, diced red onion, diced jalapeño (if using), and diced red bell pepper.
- Add the lime juice, lemon juice, and salt to the mixture.
- Mix all the ingredients thoroughly until well blended.
- Taste and adjust seasonings if necessary, then serve immediately or chill for an hour to enhance flavors.
Notes
For a spicier salsa, increase the amount of jalapeño or add diced serrano peppers.
This salsa can be served as a dip with tortilla chips or as a topping for tacos and salads.
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
