Instructions
- Preheat your oven to 350 degrees Fahrenheit and prepare a 9 x 13 glass pan by spraying it with cooking spray.
- Shred the zucchini until you have 2 cups and set aside for later use.
- In a bowl, whisk together the flour, cocoa, and baking soda; set this mixture aside.
- In another bowl, combine the canola oil, sugar, and vanilla extract, mixing until everything is well blended. Then add in the dry ingredients and mix thoroughly. Fold in the shredded zucchini gently until evenly distributed.
- Pour the batter into the prepared pan and bake for about 25 minutes. The brownies should spring back when touched lightly.
- Allow the brownies to cool completely before frosting them.
