- 3 eggs
- 1/4 cup coconut milk
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- In a mixing bowl, combine almond flour, baking powder, and salt.
- In another bowl, whisk together eggs, coconut milk, honey, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until combined.
- Heat a skillet over medium heat and add a little oil to grease.
- Pour 1/4 cup of pancake batter onto the skillet for each pancake.
- Cook for 2-3 minutes until bubbles form on top, then flip and cook for another 2-3 minutes until golden brown.
Notes
Make sure to use almond flour for the best results; regular flour will not work for a paleo version.
You can add cinnamon or chocolate chips for extra flavor.
Serve with fresh fruits or maple syrup.
