Description

These Best Paleo Pancakes are delightfully fluffy and made with wholesome almond flour. Simple to whip up in one bowl, they’re perfect for a quick and healthy breakfast, offering a delicious taste that will satisfy your morning cravings.


Ingredients

Scale
  • 1 cup almond flour
  • 3 eggs
  • 1/4 cup coconut milk
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine almond flour, baking powder, and salt.
  2. In another bowl, whisk together eggs, coconut milk, honey, and vanilla extract.
  3. Pour the wet mixture into the dry ingredients and stir until combined.
  4. Heat a skillet over medium heat and add a little oil to grease.
  5. Pour 1/4 cup of pancake batter onto the skillet for each pancake.
  6. Cook for 2-3 minutes until bubbles form on top, then flip and cook for another 2-3 minutes until golden brown.

Notes

Make sure to use almond flour for the best results; regular flour will not work for a paleo version.
You can add cinnamon or chocolate chips for extra flavor.
Serve with fresh fruits or maple syrup.
