- 1 teaspoon vanilla extract
- 1 sheet store-bought or homemade chilled pie dough
- 1 egg (for egg wash)

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a medium bowl, combine the mixed berries, ¼ cup of sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Toss gently until the berries are coated.
- Roll out the pie dough on a lightly floured surface and place it on the prepared baking sheet.
- Spoon the berry mixture into the center of the dough, leaving a border of 2 inches.
- Fold the edges of the dough over the berries, pleating as necessary to create a galette shape.
- Brush the dough edges with the egg wash and sprinkle with granulated sugar.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the berries are bubbling.
- Allow to cool slightly before serving.
