Description

These BBQ Shrimp Bowls are packed with flavor and perfect for a quick, healthy meal. Featuring juicy shrimp, fresh veggies, and fluffy rice, they’re an easy homemade delight.


Ingredients

  • 1 lb. large shrimp, peeled and deveined
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp parsley
  • ½ tsp salt
  • ¼ tsp thyme
  • ¼ tsp oregano
  • ¼ tsp cayenne, optional
  • ½ cup bbq sauce, divided
  • 2 mini cucumbers, sliced
  • 1 cup shredded carrots
  • 1 avocado, sliced or diced
  • 2 cups white rice, cooked

Instructions

  1. Cook the rice according to package instructions if not done already.
  2. In a large bowl, combine shrimp with a spice mix made from paprika, garlic powder, onion powder, parsley, salt, thyme, oregano, and optional cayenne.
  3. Heat olive oil in a skillet over medium heat, add the shrimp and cook for about 4 minutes until pink. Remove from heat and stir in half of the BBQ sauce.
  4. Divide the cooked rice into two bowls, placing half of the shrimp in each bowl. Add cucumbers, carrots, and avocado to both bowls.
  5. Drizzle the remaining BBQ sauce over each bowl and serve.

Notes

Feel free to customize the veggies based on your preference.
Use brown rice or quinoa for a healthier option.
