Description

BBQ Chicken Thighs are a delicious and easy dish featuring tender chicken marinated in a blend of spices. Ideal for a quick and flavorful dinner, this recipe combines grilled chicken with homemade BBQ sauce for irresistible taste.


Ingredients

  • 2.5 lbs chicken thighs boneless skinless
  • 2 tablespoons brown sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 3 tablespoons avocado oil
  • 1 cup homemade southern BBQ sauce

Instructions

  1. In a large bowl, combine chicken thighs with brown sugar, kosher salt, garlic powder, onion powder, smoked paprika, chili powder, and avocado oil. Mix well and marinate for at least 4 hours or overnight.
  2. Thirty minutes before grilling, take the chicken out of the fridge to come to room temperature.
  3. Preheat your grill to medium-high heat.
  4. Place the marinated chicken thighs onto the grill. Lower the heat to medium and close the lid. Grill for a few minutes on each side until charred and grill marks appear.
  5. Once the chicken is nearly cooked through, baste both sides with BBQ sauce and move to indirect heat. Allow the sauce to absorb and finish cooking the chicken.
  6. Check the internal temperature of the chicken, aiming for 175-190°F for dark meat (or 165°F for white meat). Remove from grill and serve with additional BBQ sauce.

Notes

For extra flavor, marinate the chicken overnight.
Adjust the spice levels by adding more chili powder if you prefer heat.
Serve with sides like coleslaw or corn on the cob for a complete meal.
